Crust:
3/4 c coconut flour
1/4 c liquid extra virgin coconut oil
2 large organic eggs
1 TBS raw organic stevia
1 pinch sea salt
Mix all and put in buttered or olive oil pan to line the edges
Filling
16 oz 1/3 fat cream cheese
1/2 raw organic pineapple (or 8 oz can, I always use fresh and organic if I can)
1 large egg
1/2 c raw organic stevia
2 tsp vanilla
Mix, put in pan, top w organic coconut flakes
cook 350 for 17 min.
refrigerator at least 2 hours
