Excited for my new #beetles #gelnails lamp! Since we are moving farther out in the country, our plan is to only drive in to town a couple times a week n just play on our #farm n in our #pool! Garlic n lemon steak bites w zucchini noodles
Chicken broth
Garlic
Lemon
Steak
Zucchini
Black pepper
Crushed red pepper
Butter
Extra virgin olive oil
Parsley
Tamari soy sauce
Take 1/2 lemon n juice into bowl, add mince 3 garlic cloves, add 4oz chicken broth, 3 TBS soy sauce, tsp parsley, pinch black n red pepper. Whisk.
Simmer steak in olive oil salt n pepper
Make 4 zucchini into noodles. Put into pan w sauce, 2 TBS butter, and steak, simmer till zucchini is done.
Chicken, strawberry n avacado spinach salad
Sliced almonds
Organic Avacado
Chicken breast’s
Organic baby spinach
Organic strawberries
Balsamic vinegar
Salt
Pepper
Dijon mustard
Bring chicken, salt, pepper, olive oil n water
To a boil, shred when done w forks n drain
Mix in a bowl salt pepper Dijon mustard olive oil n balsamic vinegar then add shredded chicken n set aside
Mix spinach sliced strawberries n sliced almonds in a bowl n out on plates
Add sliced Avacado around the edges, add chicken mix on top, sprinkle w natural Parmesan cheese (optional I’ve made this w poppyseed dressing too I’d you’re not a fan of balsamic

Chicken salad w cheese avacado a n pistachios
Avacado
Celery 2 sticks
Boneless chicken breast 1/4 lb
1 lemon
1:4 c sliced pistachios
1/2 c plain Greek yogurt
Organic spring mix container
Salt, pepper, thyme, extra virgin olive oil
Put chicken salt n pepper in skillet, cover e water n bring to boil till cooked, shred w fork.
Spring mix, celery n 1/4 lemon juiced in bowl
Pistachios, yogurt, 1/4 tsp ea salt, pepper, thyme mixed in separate bowl.
Juice the rest of the lemon n 1 TBSP olive oil in a bowl to make dressing
Drain chicken n mix w yogurt mixture.
Put salad on plates, top w chicken mix, drizzle w dressing, add sliced avacado n top w shredded cheese.
Well I didn’t leave the dessert sit long enough, so it fell apart but it’s SO good!!! And it’s healthy, almond flour, no sugar, organic stevia 😁
Base
1.5C almond-flour
1 tsp Baking Powder
4TBSP organic stevia
4 TBSP organic cream cheese
4 TBSP Cocoa
6 TBSP Melted butter
Caramel Chocolate mousse layer
2 carton heavy whipping cream
6 TBSP cocoa
4 TBSP organic stevia
4 TBSP organic cream cheese
1 tsp vanilla
4 TBSP sugar free ‘caramel’ r
Peanut filling
1C heavy Cream
1/3 C peanut butter
2 TBSP organic stevia
2 TBSP organic cream cheese
1 tsp vanilla
1 square Lindt 90% chocolate (melted for drizzle)
Base
Preheat oven to 180 degrees celsius and grease your springform cake pan
Combine all base but butter……
Add butter 1 tablespoon at a time until it is just combined.
Press your mixture into the pan and bake for 10 minutes.
Remove from oven and allow to cool.
Chocolate Caramel Mousse
Add all but caramel and mix with a hand mixer until combined and soft peaks form
Add caramel and mix until combined and stiff peaks form
Layer onto cooled pie crust
Cover with glad wrap and chill for 4 hours or overnight (I did freezer for 30 min)
Peanut Filling Layer
Combine all but PB and mix with a hand on high until soft peaks form
Add peanut butter and continue to mix until combined
Remove glad wrap from chocolate layer and spoon the peanut filling on top
Set in fridge for a minimum of 3 hours (I did freezer 30 min)
Release the springform pan and place on serving dish (I just cooked in a glass bakeware)
caramel sauce for drizzling over the top
Melt 1 square of lindt 90% chocolate and drizzle over top.
Shew!!! I thought when we turned in our offer on the house n they accepted we were done…..well after inspections then more negotiations……n more n more……finally signed the acceptance n celebrating w ice cream 😁
