Chicken salad w cheese avacado a n pistachios
Celery 2 sticks
Boneless chicken breast 1/4 lb
1:4 c sliced pistachios
1/2 c plain Greek yogurt
Organic spring mix container
Salt, pepper, thyme, extra virgin olive oil
Put chicken salt n pepper in skillet, cover e water n bring to boil till cooked, shred w fork.
Spring mix, celery n 1/4 lemon juiced in bowl
Pistachios, yogurt, 1/4 tsp ea salt, pepper, thyme mixed in separate bowl.
Juice the rest of the lemon n 1 TBSP olive oil in a bowl to make dressing
Drain chicken n mix w yogurt mixture.
Put salad on plates, top w chicken mix, drizzle w dressing, add sliced avacado n top w shredded cheese.
