Tonight’s #GreenChef dinner is #PorkChops w #Tzatziki and #ChardSalad
Chop grape tomatoes and garlic and put in tin foil on baking sheet at 400 w olive oil salt n pepper for 20 minutes
Chop chard and artichoke hearts and put in bowl. Drizzle w garlic-herb lemon vinaigrette and add sunflower seeds and feta cheese.
Put pork chops in skillet w olive oil, fennel orange spice blend, salt n pepper. Sear 3 min each side then put in oven 7 minutes.
Slice pork chops n put on plate w roasted tomatoes n drizzle w tzatziki sauce, add salad on the side.
This was 750 cal, so I gave Kevin a little more meat so his was closer to 1000 and mine 500. Thus one was really good too! Although I think I’d make it w spinach or romaine salad 🥗😁
