Mediterranean chicken

Preheat oven to 400 degrees.

Trim stem ends off Brussels sprouts. Quarter lengthwise.O Roughly chop artichoke hearts.

Roughly chop dry-roasted almonds.

SEASON & ROAST BRUSSELS SPROUTS

Place Brussels sprouts in a medium bowl. Drizzle with about 1 tablespoon cooking oil.

Season with about 1โ„4 teaspoon salt and a pinch of pepper. Stir to coat.

Spread Brussels sprouts out in a single layer on a lightly oiled, foil-lined baking sheet. Roast 10-15 minutes, or until fork tender, stirring halfway through.

MEDITERRANEAN CHICKEN

PREP

Preheat oven to 400 degrees.

Trim stem ends off Brussels sprouts. Quarter lengthwise.O Roughly chop artichoke hearts.

SEASON & SEAR CHICKEN 4

Pat chicken cutlets dry with paper towels. Season with salt and pepper.

Heat about 1 1โ„2 tablespoons cooking oil in a medium oven-safe sauteฬ pan over medium-high heat. Add chicken to hot pan. Sear about 2 minutes. Remove from heat.

ROAST CHICKEN & VEGGIES

Flip chicken. Add artichokes, roasted red peppers, and about 2 tablespoons water to

pan. Season veggies with salt and pepper. Stir. Transfer pan to oven. Roast 6-8 minutes,

or until chicken is fully cooked.* (Chicken is fully cooked when internal temperature

reaches 165 degrees.)

FINISH BRUSSELS SPROUTS

Return Brussels sprouts to bowl used for seasoning. (Careful! Baking sheet may still be hot.) Add feta cheese and about half of the almonds. Drizzle with about half of theparsley-basil pepita pesto. Stir to combine.

PLATE YOUR DISH

Cut chicken into 6-8 slices each.

Make a pool of the remaining pepita pesto on one side of each plate. FanMediterranean chicken over top. Spoon roasted artichokes and roasted red peppers over chicken. Serve Brussels sprouts on the side. Garnish with remainingalmonds. Enjoy!

Etch downtown Nashville restaurant

Oh my goodness dinner was SO amazing! According to #TripAdvisor the #3 #restaurant in #Nashville

We got their bread, #RoastedCauliflower (yumm!!)

Dinner was

#wildcaughtsalmon n snap peas w watermelon (weird addition on the melon but the meal was SO good!

He got #ShiitakeNoodlesWithMeatballs spicy but super good too and then #RoastedPotatoes

Then we couldnโ€™t decide on desert so got two to split #StrawberryAlmond #chocolatecaramelpretzel

We are soooo stuffed lol day 1 tomorrow lol ๐Ÿ˜‚

Our sever Kim was amazing too!!!

Potato breakfast

Not really so healthy but #carbalicious lol

One of his favs so I make about once a month.

2 Idaho potatoes ๐Ÿฅ” diced

Green pepper diced

Bacon pieces

Olive oil, salt, pepper, sazonador

Stir often, simmer 30 min on low….

When almost done scramble 4 eggs n put in n top w Colby ๐Ÿง€ cheese

Blackened tilapia tacos

Cumin spiced rice w tomato, cabbage slaw, chipotle lime aioli

This is definitely staying on our menu!!!! Sooooo good!!!! I think I would have added another seasoning in the rice only thing…..we both LOVE it

930 calories and we were both stuffed!

Tbs olive oil in small pot, add cumin seeds, toast 1-2 min. Add long grain rice 1 1/4 c water n salt, bring to boil then simmer w lid till water gone.

Put cabbage in bowl diced sprinkle 1/2 lime, drizzle olive oil salt n pepper n stir.

Warm white corn tortillas in oven 300 degrees, wrap in foil n add a few drops water, 8 min

Dice tilapia, put in skillet w olive oil and blackened spices, salt n pepper. Stir often cook about 7 min

Fluff rice, add diced Roma tomato salt n pepper. Put on side of plate.

Add tortillas, fill w tilapia, top w cabbage slaw, drizzle chipotle lime aioli over it.
